Remembering Claes Andersen

Claes AndersenClaes Andersen, the owner and namesake of the longstanding Laguna Beach fine-dining favorite, died recently. He was 63.

“Claes Andersen was an enthusiastic fan of Laguna Beach, an early booster to finer dining, and a devoted disciple of wine,” says Orange Coast restaurant critic Gretchen Kurz. “His example of refined hospitality influenced generations of O.C. diners, chefs, and wine followers. His generosity and fondness for the community will be warmly remembered and appreciated. Claes will be missed by many.”

In 1969, Andersen graduated from Denmark’s Hotel and Restaurant School with honors. He went on to work as the executive chef of the Westwood Plaza Hotel before opening Claes in 1985, after he bought the Hotel Laguna. In 1993, he housed displaced residents in the hotel after a massive fire claimed 389 homes on the Laguna hillside, including his own.

The memorial service will be at 2 p.m. Saturday (Aug. 21) at Laguna Presbyterian Church (415 Forest Ave., Laguna Beach), followed by a 5 p.m. reception at Hotel Laguna (425 South Coast Highway, Laguna Beach). A midsummer night's gala, plus a fun brunch for Sunday

Cupcake Camp comes to town

CupcakeCampVolunteer bloggers and bakeries are donating cupcakes for Cupcake Camp, a massive bake sale this weekend to help raise money for El Pozo, an organization that fights human trafficking. Stop by, have a cupcake (or three!) to show your support.

There will be competitions for the most unique, the “most OC” and the best childhood-inspired confection. For attendees, there’s also a cupcake eating contest(!!). Two Parts Sugar bakery of Costa Mesa is raffling off $1,000 worth of cupcakes (in the form of a wedding cake or cupcake tower). The bakery will also debut a new cupcake flavor at the event. Attendance is free, but there’s a suggested donation of $10.

Dine for a cause: 100 percent of Ra Sushi’s sales on certain menu items will be donated to St. Jude Children’s Research Hospital starting Sunday. Taste of Ladera this weekend

The sixth annual Taste of Ladera is a weekend packed with food, activities and entertainment, including a celebrity chef challenge and headlining rock bands Lit and The English Beat. A food court will house local restaurant booths, beer gardens and wine.

Festivals galore

The California Wine Festival starts today and runs through Saturday in Dana Point. Today's tasting event is “Taste the Future: 21st Century Classics,” where you can sample unfiltered, still-aging barreled wines, all paired with nibbles from local restaurants. The tasting is from 6:30 p.m. to 9 p.m. at the Ritz-Carlton, Laguna Niguel. $75 in advance, $100 at the door. Tomorrow's tasting is already sold out, but don't fret: Tickets are still available for Saturday’s beachside shebang, which runs from 1 p.m. to 4 p.m., (with 11:30 a.m. admission for VIP ticketholders). I don’t normally stray from restaurant news in this little space, but free cheese? And cute little cheese-loaf VW buses? Consider me sold.

We’ve all seen the packages of cheddar loaves in supermarkets, but now we’ll see them on the road: Tillamook will take its cheddar-orange retrofitted 1966 VW mini buses to the streets of O.C, making a handful of pit stops to hand out free samples of its cheeses, recipes, coupons and giveaways. It sounds like a party. Here’s the schedule for today:

After Saturday, Sage on the Coast will close its doors. Chef Rich Mead’s sister location, Sage Restaurant (at Eastbluff), will remain open. We’ve heard rumors of what’s moving into SOTC's space, and all we can confirm so far is this: Master Sommelier Michael Jordan is somehow involved, and the proposed eatery will serve Matteo’s chopped salads. For those who don’t remember Matteo’s, it was a classic Italian place run by Jordan’s family in Corona del Mar years ago. More info to come. There’s quite a bit of buzz circling the St. Regis lately. First, Stonehill Tavern has appointment of Brian Black as executive chef. Black replaces Adam Keough, who left the restaurant to pursue travel and research in Asia. Black is a Culinary Institute graduate who has worked for the MGM Grand in Las Vegas, Aqua (which later became Stonehill Tavern) and as sous chef and chef de cuisine at the Loft at the Montage Laguna Beach.

The St. Regis has also unveiled a program for oenophiles who want to learn in a formal setting. Learn About Wine, an L.A.-based program, has partnered with the resort to offer one-night classes and a four-week “L.A.W. School” credential program. Some of the courses to look forward to:

  • Intro to Wine. March 18 or Aug. 19
  • Greatest Wines of the World. April 22
  • Palate Builder/Taste Like a Pro. June 17

Glenlivet makes the rounds

Morton’s the Steakhouse (photo above) is featuring a Glenlivet whiskey tasting at two of its OC locations this month. Studio’s executive chef is a James Beard award semifinalist

Craig StrongThe “Oscars of the food world” has just announced its nominations for 2010 restaurant and chef award semifinalists, counting Executive Chef Craig Strong of Studio in Laguna Beach as one of its picks for best chef this year. He is the only OC chef to make the list.

Strong is in the Pacific category and is up against big names like Josiah Citrin of Los Angeles’ Melisse, and Alan Wong of the eponymous eatery in Honolulu. Finalists will be announced March 22 at the Palace Café in New Orleans. (Here’s a link to a PDF  of the rest of the list.)

Strong hails from Michelin-starred restaurants and was formerly the chef de cuisine at The Dining Room at The Langham, Huntington Hotel & Spa in Pasadena, Calif. Haven Gastropub's Executive Chef Greg Daniels and his team will work pro bono on Jan. 25, donating all profits to Haiti relief. 

On Jan. 25, Haven Gastropub in Orange will donate 100 percent of its profits to Haiti relief efforts. “The entire staff is working for free that day,” says Executive Chef Greg Daniels. “And the staff is really excited about doing it.” 

From 11 a.m. to 1 a.m., every last cent the restaurant earns will be donated to MercyCorps. The restaurant’s grand total will be tracked on the restaurant’s donation page the following day.

Last night, Pizzeria Ortica officially turned a year old. (Can I just say I love this slow trickle of L.A. restaurants opening on our side of town?) David Myers spent some time behind the bar as mixmaster, shaking drinks from the restaurant's new 18A cocktail menu. Best bets: Try the Rossini ($10), which is a blend of vodka, lemon juice, strawberries and mint. It's kind of what you would expect winter and summer to taste like if they combined forces in a glass. A splashy pre-opening party for AnQi last week featured the likes of reality diva Kourtney Kardashian and actor Alan Thicke. South Coast Plaza’s sexy bistro and noodle bar officially opens to the public today. So will the food live up to AnQi’s celebrity-studded hype? Given the An family’s track record, it just might. The Ans are behind Beverly Hills’ upscale Vietnamese eatery Crustacean, which has long been a favorite of critics. AnQi features the family’s recipes, some borrowed from Crustacean and some entirely new. 

A bonus: There’s a sleek runway in the dining room that will no doubt feature some fashions from South Coast Plaza’s retailers. Sounds like AnQi will be a fun ride for foodies and fashionistas alike.

Chef Thomas Keller will stop at South Coast Plaza Thursday at 11 a.m. to sign his latest cookbook, “ad hoc at home.” ad hoc is part of his Yountville, Calif., empire and was originally thought to be a temporary restaurant while Keller planned a gourmet burger joint in its place. ad hoc’s comfort-food menus were so well-received that Keller and co. decided to make it permanent. (On a related note, Keller’s next installment of his Bouchon chain will open in Beverly Hills this month.) 

The “ad hoc at home” cookbook features recipes for many of the dishes served at the restaurant, along with Keller’s personal stories and cooking tips. Calendar

Tiki comes to Huntington

Arthur and Delia Snyder open Don the Beachcomber in Huntington Beach.

Until recently, Don the Beachcomber was a tiki-themed restaurant chain that faded into legend with many of the other dining trends of yesteryear (remember casseroles?). Hoping to keep the party going, husband-and-wife team Arthur and Delia Snyder have resurrected the everlasting luau in Huntington Beach, with tropical rum drinks and tribal masks to boot. The restaurant graced O.C.’s landscape in 1969 with a Corona del Mar location, but had first opened in the late 1930s in Hollywood. 

Don’s current menu echoes offerings served more than 70 years ago, with things like sticky ribs, ahi poke tacos, pulled pork and pineapple upside-down cake. Dave Martin's Truffle mac and cheese

Yesterday, “Top Chef” contestant Dave Martin gave a cooking demonstration at the Tustin location of Zov’s. One of his most popular dishes is his truffle macaroni and cheese, which he’s shared with Orange Coast magazine. The recipe is below. Happy cooking!

Black Truffle Mac ‘n’ Cheese

From: Chef Dave Martin

Yield: 6 to 9 main-course portions

  • 1 tablespoon extra virgin olive oil
  • 1/2 cup shallots, minced
  • 1 1/2 tablespoons fresh oregano, chopped and cleaned from stems
  • 1 1/2 tablespoons fresh thyme, chopped and cleaned from stems
  • 12 cloves of fire-roasted garlic
  • 1/4 cup sherry
  • 1/4 cup brandy
  • 3 tablespoons black truffle shavings (canned, with liquid)
  • 4 cups (1 quart) heavy cream 
  • 1 egg, beaten (for liason)
  • 1 pound cooked and drained Gemelli noodles 
  • 1 cup Parmesan cheese, grated
  • 1 1/2 cups Fontina cheese, finely grated
  • 1/4 cup white truffle oil
  • 1 teaspoon Tabasco 
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 1/2-2 cups seasoned bread crumbs

Dave and ZovProcedure: 


1. Preheat oven to 350 degrees. Over medium-high heat, heat olive oil in a large pot (large enough to hold the cooked pasta). Add shallots, and cook until shallots are caramelized, about 6 to 8 minutes. Add roasted garlic and cook for 2 minutes. 

2. Add sherry and brandy to deglaze pan, making sure to scrape fond off of pan. 

3. Reduce heat to low and add truffle shavings and cream. Simmer for 30 minutes, or until cream is reduced and thickened. 

4. Ladle some of the cream mixture into a small bowl. Slowy whisk in beaten egg until fully incorporated. (This has to be done slowly, so the egg won’t curdle.) Add egg mixture to pot. 

5. Remove pot from heat. Add pasta, Parmesan and Fontina cheeses, truffle oil, Tabasco, salt and pepper to pot. Mix all ingredients thoroughly. 

6. Spoon mac and cheese into a greased 9x13 (larger if you have it) pan. Top with seasoned bread crumbs. Place in oven and bake for 20 to 30 minutes, or until bread crumbs on top are browned. Serve hot.

Pelican Hill gets a new chef

Pelican Hill's new chefThe Resort at Pelican Hill’s Andrea Ristorante has picked a celebrated Italian chef to head its upscale kitchen: Stefano Chiarugi, a Tuscany native with 20 years of restaurant know-how under his belt.

Chiarugi has previously worked as chef de cuisine at SWITCH restaurant in the Encore Wynn Las Vegas hotel, Osteria Del Circo in the Bellagio Hotel and New York City’s Le Cirque. He started his culinary education in Italy at 14 years old at the Institute Profesional di State “F. Martini” and has owned and worked at restaurants in Tuscany.

'The Big Wisniewski' at a plate near you

"The Big Wisniewski" will be available for one month at Ra Sushi.

We all know the Anaheim Ducks play a mean game on the ice -- but now we know that gamefaces can apply to the plate, too. A few weeks ago, Ra Sushi held a contest pitting Ducks James Wisniewski, Saku Koivu, Scott Niedermayer and Mike Brown against each other to see who could create the best sushi roll. The winning roll (deemed by judges and fans) was none other than “The Big Wisniewski,” made by the Anaheim Ducks defenseman himself. It’s made of spicy yellowtail, crab, jalapeno and cilantro, served with avocado, Sriracha and a chili-ponzu sauce.

Scott’s Seafood celebrates its 20 years of serving San Francisco-inspired seafood dishes with an anniversary party on Saturday. The organization’s annual September program includes bringing awareness to more than 75 children’s charities, along with free family activities. Tonight, Pizzeria Ortica is hosting its first wine dinner, featuring some wines from southern Italy. On Wednesday, four chefs will gather and cook at The Winery in Tustin to raise money for (my culinary alma mater!) Orange Coast College’s culinary arts program. The “Orange County Celebrity Chefs Culinary Arts Scholarship” fundraiser is a mouthful to say, but it’s guaranteed that the six courses to be prepared that evening will be even more. Chefs cooking the dinner are The Winery’s Yvon Goetz, Pascal Olhats (Tradition by Pascal among others), Andrew Sutton (Napa Rose) and Rob Wilson (Ritz-Carlton, Laguna Niguel). The last time we had Orange County Restaurant Week, I made a hefty list of restaurants I wanted to hit up to take advantage of all the deals. I mean, this was a painstakingly crafted list – agonizing almost – because there were so many restaurant to choose from and so little time. After the week was over, I was quite a satisfied diner and had gained a pound or two (which, incidentally, I still have to this day). As my bad luck would have it, I’m on vacation for the entire duration for this installment of OCRW. It’s a bummer (but it’s not that bad, since I’ll be on an island somewhere!) but I hope you’ll take advantage of it for me.

The skinny: More than 120 of the county’s restaurants are offering prix fixe lunch and dinner options through Saturday, Sept. 19. Sept. 13 marks the sixth year for Flavors of Orange County, which benefits the American Liver Foundation. It’s kind of different than some of the other charity dinners in that there will be a chef assigned to create a five-course, wine-paired meal for each table. Chef Jamie Gwen hosts, and the chefs in the kitchen that evening include Adam Keough (Stonehill Tavern), Michael Nirtaut (The Fairmont Newport Beach), Franco Barone (Antonello), Amar Santana (Charlie Palmer), Ronnie Arnold (Hush), Donald Schoenburg (Leatherby’s), Brian Black (The Loft at the Montage Resort & Spa), Lupe Camarena (Ritz Restaurant & Garden) Edgar Agbayani (Roy’s) and Kevin Jerrold-Jones (Tabu Grill).

Is it a sign of the times when you can order a bacon-wrapped filet mignon for $10?

Maybe.  It’s definitely the kind of deal that diners should take advantage of. The Cedar Creek restaurant is where it's being served through the end of September as part of a promotion to draw diners to its Laguna Niguel location. Other items on the $10 menu include fish & chips and the restaurant’s deluxe cedar-planked burger with fries (photo above).

Have you been to the Orange County Wine and Food Center yet? If you haven’t, it might be time to check it out. This place has so much potential for being a solidified meeting place for wine and food fiends alike, one of the reasons being its newly remodeled demo kitchen. Chef Paul Squicciarini and guest chefs teach reasonably priced (and sometimes free!) cooking classes, like the one I attended Monday on burgers. The class was is part of the center’s “Effortless Entertaining” series (The “Effortless” part is what drew me in).

Chef Squicciarini put a spin on classic burgers by using different meats and pairing them with complimenting dressings, sides and wines. The casual setting allows for students and chefs to sound off on ideas and techniques. In fact, some of the most helpful tips were in informal exchanges between attendees and Squicciarini. Some highlights from the conversation:

  • One of the best places to get ground lamb is the Mission Ranch Market  in Mission Viejo.
  • To cut goat cheese and fresh mozzarella, use a wired cheese slicer or unflavored dental floss. These work better than knives, which often stick to cheeses.
  • Rielsing pairs well with spicy foods because of its residual sugar content. For the class, Squicciarini paired it with an ahi tuna burger and cucumber salad (recipe below).
  • Roasting peppers: We all know you can roast bell peppers directly on an open flame until they turn black. But to easily remove its skin, place hot pepper into a covered container and let steam for a few minutes. This will loosen it up considerably and make it a breeze to peel.

The OCWFC will have Effortless Entertaining classes through the end of the year, with focuses on Moroccan (September), Asian (October), Steaks (November) and Hawaiian (December) cuisine. Yield: 4 servings

  • For tuna burger:
  • 1-1/2 pounds fresh ahi tuna
  • 1 teaspoon fresh ginger, minced
  • 2 teaspoons scallions, finely chopped
  • 2 teaspoons soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper, to taste
  • For wasabi oil:
  • 1 tablespoon prepared wasabi (powdered wasabi with water added)
  • 1/4 cup rice wine vinegar
  • 1 teaspoon sesame oil
  • 1 egg yolk
  • 3/4 cup olive oil
  • Salt and pepper, to taste
  • For cucumber salad:
  • 1 Hothouse cucumber, peeled, seeded and sliced thinly
  • 1/2 cup seasoned rice vinegar
  • 1/2 cup sugar
  • 2 cups Napa cabbage, shredded
  • 4 sesame seed buns

1. Make the tuna burger: Coarsely chop tuna until it resembles ground meat. Place in bowl with remaining ingredients, season with salt and pepper and mix well. Divide mixture into 4 evenly shaped burgers. Wrap each in plastic and chill for 30 minutes.

2. Make the wasabi oil: Place wasabi, vinegar, egg yolk and sesame oil into a blender With machine running slowly, drizzle in olive oil. Season with salt and pepper.

3. Make cucumber salad: Place rice vinegar and sugar in a bowl and whisk to dissolve sugar. Add cucumbers and toss well. Refrigerate for two hours. Drain. Keep chilled until ready to serve.

4. To assemble: On a lightly oiled non-stick pan or hot grill, place the tuna burgers on and cook for about 3 to 4 minutes on each side. Place cabbage in a bowl and lightly dress with wasabi oil. Assemble burgers on top of bun and dress with napa cabbage and wasabi oil. Serve with cucumber salad on the side.


Preview: The Celebrity Food Show

It seems the Celebrity Food Show steps it up each year to top the last, and this year is no exception. Expect more local artisans, a dueling barista competition and twice-daily cooking demos from the Food Network’s Guy Fieri.

It's kind of a mishmash of trade, consumer and entertainment events, all rolled into a single weekend so there’s something that appeals to different types of food lovers. Show organizer Mary Carter expects crowds totaling more than 20,000 people, most attending to see Fieri. “He genuinely wants to meet his fans and say hello or give them a hug,” Carter says. “Working with celebrity chefs, sometimes you don’t get to see that side of them, but he’s just all about making sure he can say hello to as many people as he can.”

Fieri’s demos are at 11 a.m. and 3:30 p.m. Saturday and Sunday, with book signings in between. Tickets are $35 to $125 for VIP seating.

Of all the events and the 75 wineries, 100 O.C. restaurants and 130 gourmet food companies exhibiting, here are a few that Carter says are not to be missed:

Dueling baristas: A top Italian barista competes with an American barista to create latte art, with show attendees acting as judges. Demos take place on both days of the show, with the winner announced on Sunday.

Salsa: Over on the exhibitor floor, artisan food company Sancho Blanco  from Colton, Calif., will have tastes of its award-winning salsa for attendees to try.

Cake competition: The best and brightest culinary students from the Art Institutes throughout the country will be competing for best in show with towering cakes over three feet tall.

Fudge: The Napa Valley Fudge Company  claims to have the “best fudge in the world,” says Carter, who hears that declaration all the time. But the company sent her a sample, and she had to agree with them. “It really is the best fidget we’ve ever had,” Carter says.

OC Fair: The Zucchini Weeni and other delights

See this man? The one above with the innocent smile? That's Chicken Charlie. And for the record, he's not so innocent. (But that’s not a bad thing.)

One can argue that he’s single-handedly responsible for the glut of deep-fried foods at the OC Fair. He is, at least, responsible for the treats that people talk about long after the fair is over. Take his Krispy Kreme chicken sandwich: It's a Krispy Kreme raspberry jelly doughnut stuffed with a fried chicken patty. It debuted a few years ago but failed to make the menu cut last year. What ensued from its absence was so much disappointment and woe from loyal fans and fairgoers that he's decided to resurrect the sandwich for 2009.

This year, Chicken Charlie (Charlie Boghosian is his real name) debuts yet another dish that will leave people talking. The Zucchini Weeni ($5.75) is a hollowed-out a zucchini, stuffed it with a hot dog, battered and deep-fried, and finally served with an optional squirt of ranch dressing. (And I guess you can say it's not as bad as the Krispy Kreme, because you're getting some veggies in.)

Chocolate covered bacon

By chance, I ran into Chicken Charlie at a Yelp bacon event  last night. I had attended to try the chocolate covered bacon (pictured above) which is another OC Fair first (it's also a goodie, especially with salt!). There stood Chicken Charlie, deep-frying Oreos and Zucchini Weenis. I got to try a Zucchini Weeni (Pictured at bottom right. It was awesome!) and ask him something that I've always wondered about him.

Zucchini WeeniYou see, there's a rumor  that if you bring anything to him, he'll deep fry it for you. I had originally asked a helpful OC Fair employee about it. “He won’t deep-fry anything you bring him,” says OC Fair Communications Director Robin Wachner. “But maybe anything within reason. He just may deep fry it if you ask him.”

So I did. Would he deep fry anything for me? He smiled. No, he won’t deep fry just anything, he says, confirming what Wachner said. “If someone gave me plastic, I wouldn’t do it because it melts,” Charlie said. “But I did deep-fried my own T-shirt once.”

He’s fearless. If we don’t love him for that reason alone, we love him because he gives us an excuse to order things like Zucchini Weenis and Krispy Kreme sandwiches in an environment where it's not only Kosher, but it's embraced - applauded, even.

Jumbo funnel cakeOther OC Fair debuts to look forward to:

  • Pizza Bites ($5.75): A deep-fried pizza pocket.
  • Zucchini Nachos ($8.75): Zucchini curls topped with cheese, bacon and jalapeños.
  • Deep-fried s’mores ($5.75): It’s exactly what it sounds like, and it’s “ridiculously good,” Wachner says. “It tastes like a doughnut filled with chocolate and marshmallows.”
  • Jumbo Funnel Cake: Head over to the booth that says “Apple Fries,” and you’ll find these mega funnel cakes (photo, left). They’re $11 (without strawberry and whipped cream topping), and if you can finish the entire thing in 20 minutes in front of an audience, you won’t have to pay for it. Just to give you an idea of how big it is, it feeds six to eight people. (Good luck!)

Healthy items: “Man can’t live on deep-fried food alone,” Wachner says. For this reason, Chicken Charlie has hummus, pita bread, grilled chicken and beef kabobs on his menu.

'Next Food Network' contestant comes to O.C.

Eddie Gilbert keeps apologizing to me for his rambling. “I’m a rambler, I really hope I’ve given you what you need for the story,” says the former “Next Food Network Star”  contestant. I tell him not to worry, because ramblers can actually be a blessing for journalists. “I love it when people are all over the place,” I said. “It means they're thinking about their answers and not feeding me generic PR.”

Gilbert will be in town to head a cooking class at Sur La Table in Newport Beach on July 12, where he’ll demo things like grilled salmon with vanilla sauce and a sandwich that he calls “The Truth.” (See bottom of post for more class info.) But before being cast on the Food Network reality show, the former Huntington Beach resident used to work at a tech firm near Sunday’s demo site. “I used to work at Fashion Island, so it’s kind of funny I’m now making an appearance in the same shopping center,” Gilbert says.

Here’s what the 30-year-old rising culinary star has to say about O.C., the show and what he’ll tackle next.

C.F.: Do you have a favorite O.C. restaurant?

E.G.: Lou’s Red Oak Barbecue Grill  in Huntington Beach. I used to live right next door on Brookhurst.

C.F.: Are there any behind-the-scenes moments from the show that come to mind?

E.G.: The little private time we did have was well spent. Jeffrey [Saad] and I would spar at the end of the day. We’d come home and need to get excess energy out, so we would move the couches and shadowbox with each other. Jeffrey is a third degree black belt.

And we had family dinners. There were nights we would get home and cook for each other, and everyone sat down and had dinner. It was a great way to decompress. It was the time we all got to see each other for who we are naturally. The 10 of us still communicate and have amazing relationships.

There’s a guest post you wrote on a blog where you said that you didn’t think you deserved to go home when you did. What was your reason?

I think I might do one or two things differently. I definitely needed to be more consistent. But I felt that winning the challenge [the week before] should have at least counted for something. I totally respect the opinions of the judges, but I won a challenge and it should have proved that I could hang. But you just gotta roll with it; it is what it is. I didn’t finish the way I wanted to finish, and didn’t get to finish the way I could have finished. It’s something I deal with. I don’t blame anyone.

What are your plans after the demo tour?

Teddy [Folkman] and I have a very good friendship, and I’m going out to [Washington] D.C. to cook in his restaurants for eight or nine nights. I’m hoping to get back into restaurants. I’d really love to work anywhere where I can really absorb some new knowledge. I just want to act like a giant sponge. I also have a Web site and a private catering company. It’s more like a guy site. I know a lot of guys who don’t cook. You’re a guy, you should know how to play with fire and knives. That’s my excuse. I went to college, got some degrees, and I’m doing exactly what my mother told me not to do as a kid. It’s fun.

EDDIE GILBERT’S RATATOUILLE TOWER

Yield: 4 servings

  • 2 zucchini, cut into 1/4-inch round slices
  • 1 eggplant, cut into 1/4-inch round slices
  • 2 carrots, sliced
  • 8 slices Halloumi  cheese
  • 2 cups garbanzo beans, drained and dried
  • 5 tablespoons canola oil
  • 4 Portabella mushroom caps
  • 1 bunch fresh mint, finely chopped 
  • Salt and pepper, to taste

PROCEDURE:

1. In a large skillet, place sliced zucchini, eggplant and carrots. Sauté until vegetables have browned just a bit. Add a pinch or two of salt and pepper to the veggies while they are sautéing. In another skillet, sear Halloumi on both sides and set aside.

2. Add canola oil to another pan and heat over medium-high heat. When oil is hot, add garbanzo beans and lightly fry until golden brown.

3. To serve: Place mushroom cap on a plate. Stack sautéed vegetables on top of mushroom cap and top with two slices of Halloumi cheese. Scatter fried garbanzo beans around the veggie stack and garnish with freshly chopped mint. Repeat for remaining three servings.

The Orange County Wine & Food Center will host a Culinary 101 of sorts with a class on Mother Sauces, the handful of basic sauces from which hundreds of other sauces can be derived. Learn about emulsions, meat sauces, stock-based sauces and ganache. The class is $65 per person and includes tastes of the following menu with wine pairing:

  • Dungeness crab cakes with chipotle hollandaise
  • Sun-dried tomato and pesto crusted chicken with roasted garlic veloute
  • Mint pappardelle with lamb bolognese

Cali vineyards visit Coto

HammerSky Vineyards of Paso Robles, Calif., will provide tastings at the Coto de Caza International Wine Ventures shindig. 

On June 26, 13 of the state’s rising-star wineries will be at the Coto de Caza Golf & Racquet Club for an intimate wine tasting festival. 

“It’s a smaller event than most wine tastings. It’s more intimate,” says International Wine Venture’s Taylor Moody. “The wineries get more attention.”

The intimacy works in attendees’ favor, Moody continues. In bigger events, where there are upward of 50 wines to taste, it’s hard to get through them all in one night without having to be carted off or carried away (and hey, we’ve all been there). 

“You can’t try all 60 wineries or so in a single night,” Moody says. “Well, you can, but you won’t be walking out of there on your own power.” 

Wines at the Coto event will be from various parts of California. All are boutique wineries, which means they produce small batches of wine – around 2,000 to 5,000 cases per year, on average. One not to miss: Temecula-based Gouvion, which Moody says is one of the best up-and-coming winemakers from Southern California. 

Winemakers will be on-hand to talk with attendees. There will also be food, a raffle and music at the event.

The Los Angeles Angels of Anaheim and Trader Joe’s markets are hosting an annual canned food drive benefiting the Second Harvest Food Bank of Orange County. You don’t have to attend the Angels vs. Padres game to donate, however: Just go to the Angel Stadium parking lot, tell the guard you’re donating and you will be reimbursed for the parking pass ($8) when you leave. There will be collection stations at gates 1, 4 and the Home Plate gate from Friday through Sunday through the games’ third innings. Donate at least 10 canned food items and you’ll get a voucher good for two tickets to a future Angels game.

Bravo’s popular reality show “Top Chef” is making a pit stop on its summer chef tour at the Original Farmers Market in Los Angeles. Cheftestants Hosea Rosenberg (last season’s winner) and Fabio Viviani (voted fan favorite) will demo and provide samples of their signature dishes. Pre-registration for the Friday and Saturday events is closed, but there are seats available on a first-come, first-served basis. Admission is free.

'Butter Bomb' comes to Brix Wine Bar

The Trinitas 2007 Carneros ChardonnayThough California Chardonnays are known for their buttery quality (due to what the experts call malolactic fermentation) the Trinitas 2007 Carneros Chardonnay is supposedly the butteriest of them all.

“It’s a real butter bomb,” says Brix Wine Bar certified sommelier Rick Reich says. (Lucky for us, it’s not quite as caloric as the real stuff.)

 The vino, hailing from the Trinitas Cellars in Sonoma, Calif., is one of eight reds and whites featured at an informal wine tasting Thursday night at the cozy Brix Wine Bar in Sunset Beach. Reps for Trinitas will also be on-hand to talk about their wines. Tasting is $15, and no reservations are required.
